Kelp and eggs were good, the plum drunk was also quite enjoyable. I tried the extra wide noodle and didn't enjoy it, it was quite under cooked inside or perhaps it was just too thick. The broth from the signature and their braised beef were lacking actual chinese spice flavor or perhaps the salt was too overwhelming. The beef brisket was hard and overcooked, felt like it was left over for multiple days. The beef shank was great though. Trying it once is okay but probably would not drive half an hour to come again.

Amazing noodle place. The owner seem really nice. The noodles are perfect and it's very subjective on how people would like it. My girlfriend had the thin and I had the flat. The flat was my favourite. The beef shank was cooked perfectly. The heart and soul of the soup was good. I really enjoyed the broth as well. Probably the best noodle place I have ever had in Vancouver. I would give you guys five stars even though I would of really appreciated tap water. I would take in consideration that time is rough but tap water is a must for any restaurant.
I had the Signature La Mian and Braised Beef La Mian. I’d highly recommend the threaded (triangle shaped 3mm) noodle, as it really locks in the soup flavour. The Supreme (25mm thickest) noodles were fun to try, but slightly harder in terms of texture. The braised beef was very flavourful and super soft, make it spicy if you’d like! The broth is rich and bold tasting. For appetizers, I had the spicy beef tripe which was a good portion for its price. It was also very flavourful, and not too spicy. The crunchy mix (celery, carrots, peanuts) was refreshing and light, with a slight vinegar tang.
It's a solid 3.5 stars for me. Will probably go back to try the triangle/threaded noodles. Decor and service are at least 4 stars, but food is 3 stars because the broth was quite salty... Maybe it's just us but we cooked another batch at home using the left over broth plus equal amount of water, and that came out tasting just fine. Other than that, the small dishes were good - the crunchy veggies, stewed potatoes, and peppercorn chicken (which they had filtered out the peppercorn already so it's very convenient). The hand-pulled noodles themselves have a good texture. We preferred the original style over the flat type, which was a little too soft in our opinion but that's a personal preference. Service was very friendly and fast once you get a seat - it's a small shop so # of tables are very limited given the covid restrictions.
