For the original, Maison Orphee does have its own artisanal oil mill and creates a unique unfiltered, cold-pressed Canadian canola oil: nutty, golden, not as peppery as a virgin olive that Maison Orphee also sells, but in baking, oh yes! Cakes become richer, with a vibrancy that captures the sun on Canadian canola fields.
As for the mustard, do try the Moutarde Biologique pour vinaigrettes. Unlike imported mustard seeds, these are not steam, ETO (TOXIC), or heat treated, and thus preserve flavors and the natural gums that help emulsify salad dressings. And, it has an excellent taste!
My only desire is for Maison Orphee to allow factory visits to see their magic!
