When you talk about Italian food in Victoria most people will say Il Covo is a staple. I think Bar 500 will be the new staple! This place is amazing. The pasta is made fresh by hand daily, instead of using dried ingredients. I've been here about 5 or 6 times now and it has never disappointed. The Beet Tartare (yes BEET, not Beef) is amazing. Never eaten anything like it before. I've also been for brunch / lunch. The Hot Chicken Sandwich and Chicken and Waffle are both do delicious. The room is cozy, located inside the Oswego hotel, and the service is top notch. Such a great addition to James Bay!

Get here before everyone else does! What a treat! Even though, according to our excellent server, the decor isn’t complete, this newly opened gem had a fire going and was very COVID friendly. Distances were good and each table was properly sanitized. We started with two cocktails that were maybe the best I’ve had in the city. When I commented, the server informed me that they are making everything themselves. Even the flavored bitters! I had to sneak in a small beer as well, as they have my favorite local brewery, Whistle Buoy, on draft. We ordered the Beet Tatare (yes beet, not beef) and it was surreal! It had the texture of beef and was so flavorful. It was slightly spicy and had a crunch I had never experienced before. Then we ordered the meatballs and a couple of devilled eggs. The meatballs maybe had the best texture I’ve had in my life and the devilled eggs were made to taste like Cacio e Pepe. Delicious! The server recommended a white and a red wine from their small wine list and two pastas. Both wines I had never heard of but were so good and well priced. We had the Bolognese and gnocchi pastas which were both house made and blew us away. Maybe the best in the city. We finished with a tiramisu that was finally made the way they do in Italy. We usually stay away from the North American style so we’re pleased the very talented chef knew the classic! Overall what a wonderful place! Well done Bar 500! Go here right away so it lasts. The experience was amazing.
